Trim the greens from the beats and place beets on a baking sheet. Roast until cooked though (1.5 hours or until tender). Allow it to cool and remove skin. Cut the beets into wedges and place in a bowl.

To make dressing, mix all the other ingredients together. Drizzle vinaigrette over beets and toss.
