Ingredients

30 mins
2 servings
  • 200 gramspasta (any kind)
  • 250 gramsprawns (shelled & deveined)
  • 1onion, chopped
  • 5 clovegarlic, finely chopped
  • 4 largetomatoes
  • 12black olives
  • 1/2 cupcream
  • 2 tbspsundried tomatoes
  • 5 tbsptomato paste
  • 1 tbspdried oregano
  • 1 tspdried chilli flakes
  • 2 tspsugar
  • 3 tbspolive oil
  • salt
  • 1 cupwater (drained from pasta)
  • 1 bunchcoriander
  • 1 tbsppiri piri chillies (optional)

Steps

  1. 1

    Boil pasta in salted water with one tablespoon olive oil till al dente.

  2. 2

    Cut three tomatoes and the stalks of the coriander and blend till smooth. Chop last tomato into large chunks.

  3. 3

    Drain pasta in colander once cooked, reserving one cup.

  4. 4

    Place the pan back on the fire and heat remaining olive oil.

  5. 5

    Add chopped onions, garlic and sauté for five minutes till soft.

  6. 6

    Add prawns, blended tomatoes, tomato paste, sugar, oregano, chilli flakes, salt and water and cook on medium heat till sauce thickens.

  7. 7

    Add cream and stir.

  8. 8

    Add remaining ingredients, mix and toss in pasta till evenly coated.

  9. 9

    Top with chopped coriander and piri piri chillies.

  10. 10

    Serve immediately.
