Ingredients

  1. 600 gramsFlour
  2. 120 gramsTreacle sugar
  3. 120 gramsButter
  4. 120 gramsBlackcurrant jam
  5. 120 gramsHoney
  6. 3 tbspLebkuchen spice
  7. 1 gramsCloves
  8. 2 tbspCocoa
  9. 50 gramsCooking chocolate
  10. 1Orange(rind & juice)
  11. 1Lemon (rind & juice)
  12. 1packet Baking powder
  13. 2Egg yolks
  14. 1Icing
  15. 2 tbspRum
  16. 2Egg Whites
  17. 200 gramsIcing Sugar

Cooking Instructions

    Melt chocolate and butter, add all wet ingredients.

    In a bowl place all dry ingredients, add wet ingredients, mix then knead together.

  3. 3

    Rest dough for 24 hours

  4. 4

    Roll out into 5mm thickness. Create cookies.

  5. 5

    Bake at 180°F celcius for 15min

  6. 6

    Mix rum, egg whites and icing sugar into liquid paste to ice the biscuits. Use different colourants to add colour, decorate with sprinkles.

    In dry climates, one can let the biscuits mature (soften) over a week or two, by placing them in an air tight container with a quartered apple. (See picture). Replace apple quarters as they dry.
