This delicious recipe I got from a fomer colleague of mine, Ina. Ever since I learned it, it is an all time favorite of my pre-christmas baking. Please not that the prepared Lebkuchen have to sit overnight in the oven. They taste best when stored for 2 weeks in a bisquit tin. Kristina K -

Sig's Fine German Christmas Stollen with Marzipan Sig's Fine German Christmas Stollen with Marzipan
I am German and this is how my grandmother and my mother both made stollen. There is no messing with yeast and this one does not need to rest for weeks, but can if you want it to, if you wrap it in tinfoil and store it in a very cold room or place, but not the fridge . Both my mother and grandmother have passed over so I am keeping up a tradition for me . Sigrun -
German Christmas Cookies: Butter Plaetzchen German Christmas Cookies: Butter Plaetzchen
I learned this recipe from my neighbour who's an excellent cook. This recipe makes a large portion, so try it with half the amount first. You don't have to use cinnamon, but it will make them more festive. She makes macaronswith leftover egg whites (Recipe: https://cookpad.wasmer.app/en/recipes/142564-german-macaroons-makronen). "Umluft" means the convection function of the oven. Recipe by Mimiyorichan. cookpad.japan -
Gingerbread cookies Gingerbread cookies
These smells bring us a little closer to Christmas. I had wanted to make these cookies for a long time and taking advantage of the fact that I had a dinner with some friends, I made them to give them as gifts. I have made holes in the top so that they can be hung from the Christmas tree too IreneGS -
Christmas Gingerbread Men Christmas Gingerbread Men
My British mother-in-law taught me how to make these since Christmas was near. She said my husband used to make these with her when he was a child. In England, you can find molasses easily, but I'm not sure about Japan... It tastes just like kuromitsu (brown sugar syrup). I imagine that you can substitute it with brown cane sugar syrup in Japan. If the dough gets sticky when cutting the cookies, dust some flour on your working surface. For 20 large cookies. German Macaroons "Makronen" German Macaroons "Makronen"
My neighbor who's a great cook, taught me this recipe. She uses 6 egg yolks for her cookie recipe, so she usually makes twice the amount of this recipe. For German Christmas pastries, I prefer simple cookies to Stollen (since I feel it doesn't know if it wants to be a bread or a pastry). You can use hazelnut flour instead of almond powder. I was taught to make each cookie from a tablespoon of dough, but it expanded too much, so I use a teaspoon instead (See Step 2). Recipe by Mimiyorichan cookpad.japan -
