
Mom's Seasoned Red Rice with Peas

Soak Achote seeds in 1 cup of luke warm water. Gently rub seeds to collect the Achote flavoring.

Strain Achote liquid into a bowl and add 3/4 tbs of salt; stir to dissolve salt.

Gently rinse/clean 3 cups of rice; place rice and 3 cups of water in rice cooker. Do not start rice cooker.

In a separate pot lightly saute onions.

Add achote water to sauteed onions; stir gently and bring to a boil.

CAREFULLY - Transfer Hot Achote water from pot to the rice cooker.

Add 1/2 cup of frozen peas to rice cooker and stir to integrate.

Taste liquid to ensure proper amount of salt...should have a slight saltiness; add salt as desired.

Plug in and start rice cooker; wait 5 minutes after rice cooker completes and then fluff or gently toss rice before serving.
