Pick the cilantro leaves and soak them in vinegar and salt for ten minutes, then rinse with clean water and chop finely.

Slice the onion into thin wedges, season with black pepper and sumac, and gently rub with your fingertips until the smell changes and the color becomes pinkish.

Add to the cilantro with a pinch of salt. Enjoy this delicious side with grilled kebab, roasted tomatoes, and peppers. 😋😋
