First, cook the lentils in water and add 1 or 2 garlic cloves to help reduce bloating. Once it starts boiling, skim off any foam. When the lentils are cooked, add a little black pepper, a bit of curry powder, cumin, and a pinch of salt. If you're following a diet, use a small amount of sea salt. Stir and let the lentils cook well, adding enough water as needed.

Once the soup is ready, finely chop 1/4 or 1/2 of an onion (as you prefer, either finely chopped or sliced). In a pan, heat 1 or 2 tablespoons of olive oil, sauté the onion, then add it to the soup. Garnish with finely chopped celery. You can also toast a little whole wheat bread or whole wheat toast to serve on the side.

(If you're not on a diet, you can add toasted vermicelli noodles or grated carrots to the soup, or any other ingredients you like.)
