Ingredients

4 servings
  1. 1 cupPrawns, chicken thighs, chorizo, clams
  2. 2 tbspSalt, pepper, paprika, oregano, saffron
  3. 1 canWhole crush tomatoes
  4. 1 cupSweet peas
  5. 1Yellow onion , garlic , parsley, lemon wedges
  6. 4 cupShort grain Spanish rice
  7. 6 cupWater

  1. 1

    Coat protein in the paprika,oregano,salt,pepper and brown in the skillet. Set aside

  2. 2

    Sauté onions,garlic,saffron in the skillet. Add tomatoes until caramelized a bit then add rice slowly and brown. Add water and simmer for 10 minutes until liquids absorbed.

  3. 3

    Add the protein to the rice mix and simmer until the rice is al dente. Turn up the heat for the last 5 minutes to brown bottom of rice
