Ingredients

20 minutes
8 servings
  • 280 g (2 cups)plain / gluten-free flour
  • 1/4 tspxanthan gum if using GF flour
  • 1 tbspbaking powder
  • 1/2 tspground cinnamon
  • 112 g (1/2 cup)Vitalite margarine / safe 'butter' of choice
  • 6 tbsplight brown sugar
  • 120 g (1 cup)small diced apple
  • 2heaped tbsp applesauce
  • 60 ml (1/4 cup)light coconut milk
  • Topping
  • 1 tspmelted 'butter' of choice
  • Light brown sugar as required for topping

Steps

20 minutes
  1. 1

    Preheat the oven to gas 6 / 200C /400F

  2. 2

    Line a baking sheet with parchment paper

  3. 3

    Mix the flour, xanthan gum if using, cinnamon and baking powder together in a bowl

    Cut in the 'butter' with a fork then mix in the sugar

    Mix in the applesauce, milk and chopped apple and form a soft, slightly wet dough

    Pat the dough out on the tin to a circle around 1 inch thick, score into 8 wedges with a sharp knife and bake for 15 - 20 minutes until golden and set

    Brush with the melted 'butter' and sprinkle with the brown sugar

    Cut the wedges out properly then let cool to serve
