Ingredients

20 mins
  1. for the grains
  2. 1/2 cupjasmine rice
  3. 2 tbspamaranth
  4. 2 tbspquinoa
  5. 1/2 cupred pepper, small dice
  6. 2 tbspmillet
  7. 1/2 cuponion, minced
  8. for the sauce
  9. 1 cupcarrot juice
  10. 2 tspolive oil
  11. 2scallions, whites only
  12. 1lemon zest
  13. 1 tbspcornstarch
  14. 1 tbspcold water

Steps

20 mins
  1. 1

    Combine grains, coat w/ olive oil, salt & pepper. Toast in oven @ 350 for 15 mins

  2. 2

    Sauce pot - place grains, cover w/ water or stock set to simmer. Stir occasionally, cook until liquid is absorbed

  3. 3

    Combine sauce ingredients BESIDES SLURRY. Season to taste

  4. 4

    Simmer sauce for 5 mins, add slurry, simmer for another 5
