This recipe is typical of Tecalitlán, my beautiful hometown. The tostada measures 28x28 cm and is called 'raspada'. The image doesn't do it justice, haha. I highly recommend it. If you can't find this type of tostada, use whatever you have at home, but make sure they're not stale.

Ingredients

  1. 1tostada per person
  2. cooked beans
  3. grated Cotija cheese
  4. 4red tomatoes
  5. 1/4small onion
  6. 1serrano pepper (optional)
  7. 2-3tomatillos (not the tiny ones)
  8. 2carrots
  9. 1orange
  10. 2limes
  11. 1 handfulcilantro
  12. salt to taste

Steps

  1. 1

    Blend the beans well until they are slightly thick, not too liquid. Set aside. Grate the cheese and set aside. Wash all the vegetables.

  2. 2

    Finely chop the onion, red and green tomatoes, cilantro, and chili. Peel and grate the carrot. Mix everything together, add salt, lime juice, and orange juice. Adjust salt and lime to taste, and it's ready.

    Spread the beans on the tostada, then add the chile de uña and sprinkle cheese on top.

    Remember that the amount of ingredients is to taste. You can add some pickled pork rinds on top, which are delicious, or some diced chicken breast, or any combination you like. This is the typical version from Tecalitlán.
