Boil the sweet potatoes until tender

Cool and cut into wedges

Heat up oil in a frying pan. Went hot drop in the potato wedges and fry until crisp

Place on a tray to drain.

For the tomato sauce

Fry onions until tender

Add garlic. Make sure the garlic does not burn

Add tomatoes and cook until tender.

Add tomato paste

Keep stirring making sure it does not burn or stick to the pan

Season with salt, black pepper, sugar

Adjust seasoning to your taste.

Cook for a few more minutes and remove from pan

Serve with the potatoes
