Peel boiled potatoes, refrigerate it for sometime, remove and grate them with cheese grater and keep aside for sometime.

Meanwhile knead dough by adding salt, ajwain seeds and nearly 2 to 3 tbsp of oil and with little water at a time start kneading the Dough. Once kneaded make round shape balls and keep aside.I

In a mixing bowl add grated potatoes, salt, amchur or chat Masala,garam masala, grated ginger, chopped chillis and mix well.

Heat tawa or nonstick pan and start rolling paranthas, stuff potato stuffing close from all the ends and roll them again and cook paranthas from both the sides with Desi ghee

Have paranthas with pickle,curd, chilli's
