Ingredients

  1. 1large red snapper
  2. 6fresh okra (chopped in half)
  3. to tastesalt and pepper
  4. 1/2 cupfresh basil
  5. 4strands of fresh thyme
  6. 1/2 bunchchopped fresh collard greens
  7. 1 tablespoongarlic powder
  8. 1fresh onion chopped
  9. 1/4 cupolive oil
  10. 1/2 cupdry chopped oregano

  1. 1

    Rub the inside of the fish with salt, pepper and garlic powder. Drizzle some olive oil on the exterior and rub on dry oragano. Put a generous crack of salt and pepper on the outside. Set fish aside.

    In a pan, heat 1/4 cup of olive oil, and add the remainder of the ingredients. Let them cook to al dente

  3. 3

    Remove mixture from pan and stuff inside fish.

  4. 4

    Put fish inside tray (like the one I have in the photo). Grill on bbq.

    Alternative: if you do not have a fish tray then spread some foil on a baking tray and lay fish on it. Put in oven at 350 then finish off on broil to get the skin crispy.

    Sever on a tray. Enjoy with a nice beer; preferably a radler type beer.
