Wash beetroot and put in a polybag.microwave for 4 minutes.peel and grate.

Beat curd till smooth.add all other ingredients.add just enough beet to get a pretty pink colour.the colour darkens or keeping.check taste.keep aside in the serving bowl.

For the baghar,heat 2tbsp oil.remove from heat.add 1tsp moong dhuli dal.let it turn golden.add seame seeds.return to heat.

Add jeera and sarson.splutter for 1 minutes.remove from heat.add red chillies and curry leaves.stir for a few seconds.pour on the prepared dahi.

Deep fry curry leaves in some oil and top raita with these.
