Ingredients

  • 1 1/2 cupsflour (gluten-free or regular)
  • 1 1/4 cupsoats
  • 1/4 cupsugar or sugar substitute
  • 1 tbspbaking powder
  • 1/4 tspsalt
  • 1/2 tspxanthum gum, if using gluten-free flour
  • 1/3 cupmargarine
  • 6 oz. (1 1/3 cup)diced dried mixed fruit
  • 1/2 cupsoy milk or milk of your choice
  • 1egg, lightly beaten (or equivalent of egg substitute)
  • 1 tspsugar or sugar substitute
  • 1/8 tspcinnamon

  1. 1

    Heat oven to 375 degrees.

  2. 2

    Combine flour, oats, sugar, baking powder, salt, & xanthum gum.

  3. 3

    Cut in margarine until mixture resembles course crumbs. Stir in fruit.

  4. 4

    Add milk & egg. Mix just until moistened.

  5. 5

    Shape dough to form a ball.

  6. 6

    On lightly greased cookie sheet, pat out dough to form 8 inch circle.

  7. 7

    With sharp knife, score round into 12 wedges.

    Sprinkle with combined sugar & cinnamon.

  9. 9

    Bake 20-25 minutes or until golden brown.

  10. 10

    Break apart & serve warm.
