In a saucepan, bring to a boil: 1 chile, 1 clove garlic, 2 red tomatoes, salt or chicken bouillon powder to taste, and 1/4 onion.

In another saucepan, bring to a boil: 1 chile, 1 clove garlic, 2 green tomatoes, salt or chicken bouillon powder to taste, and 1/4 onion.

Once the sauces have boiled, let them cool, then blend each one separately. In different skillets, sauté each sauce until the foam disappears.

If the green tomato sauce is too acidic, add a pinch of baking soda.

Heat oil and fry the tortillas until soft. Top some with green sauce and others with red sauce, then add a slice of ham to each.

In the same skillet with a little oil, fry the eggs. Sprinkle a pinch of salt and black pepper on the yolks. Once fried, place one egg on each tortilla (I was in a hurry and fried them together).

Chop the cilantro and sprinkle on top. You can serve with refried beans if you like.

Tips: You can add boiled fresh peas to the sauce, but my family doesn't like them, so I left them out. You can also use leftover sauces for tostadas, enchiladas, chilaquiles, or eggs in sauce. Make the most of everything!
