Heat oil or ghee in a pan, then add cumin seeds and let them sizzle.

Once the cumin seeds crackle, add the chopped onion and sauté.

When the onion turns translucent, add the chopped green chilies and ginger-garlic paste. Sauté well.

Add the chopped tomatoes and salt, and cook until the tomatoes soften.

Add all the spices—turmeric, red chili powder, and garam masala powder—to the onion-tomato mixture and mix well.

Add the crumbled paneer and cook for 1 to 2 minutes. Do not overcook the paneer, or it will become tough.

Finally, add the chopped cilantro to the paneer bhurji and mix well.
