  1. 1Vegetable oil for shallow frying
  2. 4Chicken drumsticks
  3. 1 1/2 cupBreadcrumb
  4. 2 tspSmoked paprika
  5. 1 tbspVegetable stock
  6. 1/2 cupGrated Parmesan
  7. 3 tbspDijon mustard

Steps

20 mins
  1. 1

    Boil drumsticks in until almost cooked through.

  2. 2

    Meanwhile- Mix crumb, parsley, paprika, seasoning and parmesan.

  3. 3

    Remove the skin and rub chicken with Dijon mustard. Coat chicken in crumb mix and shallow fry in oil on medium to high heat until golden brown.

  4. 4

    Drain on paper towel, serve with fresh corn and salad. Yum!
