This is an authentic cusine of Bengal.This is specially made on the occassion of Bengali new year and or in any other celebration

Wash the rice and mix in it ghee sugar and yellow food colour

Heat ghee in a deep pan add whole garam masalas and temper

Now add the nuts and raisins and saute for just a minute

Add the rice and saute with salt and sugar

Add warm water double of the quantity of rice

Cover and cook till the water evaporates and the rice gets cooked

The pullav is ready

To prepare mutton kosha at first marinate the mutton with ripe papaya paste and keep it for atleast one hour

Add oil and temper whole panch foron

Add onion slices saute well

Add mutton pieces saute well adding ginger garlic paste

As the mutton start changing colour add salt and cover

Keep stirring occasionally to avoid sticking to the pan

Add Potatoes and mix well

Now add 1 cup warm water and cover

Keep on low flame till it starts getting tender

In a bowl add ginger garlic paste red,chilli powder,jeera dhaniya powder and the tea liquor mix well

Heat oil in a pan add ghee and sugar, pour the mixture saute well

Now pour this masala into the mutton

Mix it well and cover again

Finally add garam masala powder and switch off the flame

Serve it with basonti pullav
