Ingredients

  • 3-4carrots, chopped
  • 2-3 stalkscelery, chopped
  • 1red bell pepper, chopped
  • 1green bell pepper, chopped
  • 1red onion, chopped
  • 1 can (14 oz)diced tomatoes with green chilies
  • 1 can (14 oz)diced tomatoes
  • 1/2 cupwater
  • 1 cupbullion (I use vegetable or beef)
  • 2 cans (14 oz)black beans, drained
  • Cumin, lots!!
  • Garlic salt, lots!!
  • to tasteSalt
  • to tasteGround pepper
  • 1 tbspoil

Steps

  1. 1

    Pour oil into large pot, then place all chopped vegetables in and sauté about 5 minutes.

  2. 2

    Add remaining ingredients and boil for 5 minutes.

  3. 3

    Cover and simmer for 15 minutes.

  4. 4

    Uncover for 15 minutes.

  5. 5

    This can also be crockpotted!
