Ingredients

  • 2 cupscooked rice (cooled)
  • 21bsp olive oil or your choice of cooking oil
  • 1/2 cupchopped green onions
  • 1 cupchicken breast chopped and boiled slightly
  • 1/4 cuppeas and carrots
  • 1egg
  • 2 tbspbutter/margarine
  • 2 tbspsoy sauce

Steps

  1. 1

    Sauté chicken, onion, peas and carrots in olive oil.

  2. 2

    Lightly scramble the egg. Mix both into one pan.

  3. 3

    Add rice and sauté for 5 minutes.

  4. 4

    For the peanut butter sauce: Mix melted butter with soy sauce and pour into the pan. Ensure it's mixed and spread out evenly in the rice.

  5. 5

    Serve hot.
