These beautiful cookies that looks like precious stones, are made of rice flour with plain flour. They look like Persian Rosette cookies but actually there are differences in the ingredients and the way you give dimension and shape to the cookies.

In a large bowl add all dry ingredients together. Stir to combine.

Next add coconut milk, eggs and water to the flour mixture. Whisk all together.

Using a strainer and strain the butter, and make sure there is no lumps.

If you want to have coloured cookies, you can add food colouring to the batter.

In a pan add enough oil, and heat up the oil. Now place our mould in the pan for 5-6 seconds,

Then take out the mould from the oil and dip the mould into the batter and try not to cover all the mould because your batter after cooking will not come out from the mould.

So let to fry for few seconds

And then remove it from the pot and place top of round shape cup to give dimension and arch shape to the cookies.
Cooked cookies will take few seconds to cool down. - 14
You can store them in a box, jar or container for several days and still they would be crunchy with very good taste (I have used sesame oil and it gives very lovely flavour to the cookies).
