Ingredients

  1. Ingredients :
  2. 1 cupGood quality Basmati Rice
  3. 1Onion big sliced thinly
  4. 4Green chillies slit
  5. 2 tbspnMinced ginger
  6. 2 tbspnMinced garlic
  7. 3Tomatoes chopped
  8. 1 tbspnTomato paste
  9. 2 tbspnFresh thick yogurt
  10. 1 cupMixed vegetables (cauliflower, beans, peas, carrots, potatoes)
  11. 1 tspLime juice
  12. Fried onions, Paneer cubes, fried cashews and raisins for garnish
  13. 1 cupMint leaves
  14. 1 cupCoriander leaves
  15. 4-5 threadsSaffron soaked in milk
  16. 1 tspTurmeric powder
  17. 1 tspchilli powder
  18. 1 tspcoriander powder
  19. 2 tbsp biryani masala
  20. 1-1 eachwhole garam masala - bay leaves, cinnamon, cloves, cardomom

Steps

    Prep work
    Fry half the onion slices in oil, drain and keep aside, Fry the paneer, cashews and raisins and keep aside. Cut vegetables lengthwise. Wash and soak basmati rice for 20 mins and drain after 20 mins and keep aside.In a pan heat oil+ghee and add the whole garam masala.

    Add the half onion that remains and fry until brown. Add ginger- garlic paste and fry well. Add green chillies, all the vegetables, chopped tomatoes, tomato paste and saute well. Add the turmeric powder, chilli powder, coriander powder, biryani masala. Mix well. Simultaneously keep 2 cups of water to boil in a separate pan. Now add the yogurt and saute well until it cooks and dries up.

    Add paneer cubes,half of the mint and coriander leaves, needed salt and sauté for some more time. Add the drained rice and evenly distribute the masala in the rice.Now transfer the biryani masala and the rice along with the boiling water to the rice cooker. Check for salt by tasting the water. Add the saffron milk, mint leaves, coriander leaves and close the cooker and put on rice mode. Once it comes to warm mode switch it off otherwise the bottom will get burnt.

    Open and garnish with fried onions, cashews and raisins and serve with raita
