Poor man taco night.... i make this often , everyone in my house love tacos / nachos... I make this around the same time I make a big bowl of salad... and use some of the lettuce and tomatoes from that, I do have some picky eaters so grabbing a few extra things like a cucumber , mushrooms (when iam grocery shopping is no big deal.)for a salad.
