Cooking Instructions

Wash the plums thoroughly with vinegar. Then, drain them well.

Score the plums lengthwise down to the pit. Next, mix the plums with sugar and let them sit in a cool place for about 4-5 hours until the sugar has completely dissolved.

Cook the plums on medium heat. Do not stir or mix the plums while cooking, as they will break down quickly. Cook until the plums start to shrivel, then turn off the heat.

Now, remove the plums and let them drain well. Take the liquid obtained and the liquid in the pot, bring it to a boil again to make plum syrup. Mash a few cooked plums, add a little syrup, cook on the stove, squeeze in the juice of 1 lemon, and cook until thickened to make plum jam!

To make plum preserves, dry the plums at 175 - 210°F for about 1 hour. While drying, use a chopstick to slightly open the oven door to let moisture escape quickly.

Finely crush the ginger, squeeze out the juice, then mix well with salt and add a little plum syrup. Cook on the stove until combined. Turn off the heat and wait for the plums to finish drying, then sprinkle this ginger mixture over them.

If you don't have a dryer, you can mix the plums with the ginger-salt mixture and stir-fry over low heat until the plums are slightly firm. And there you have it, 3 delicious summer refreshments in 1!

There are many ways to make ume plum jam, such as adding the sugar at the start and simmering the whole plums but if you do that, you may throw out some of the sugar with the stones, and it also makes it harder to pass the jam through a sieve. If you use this method, I think you only need to cook the jam for the minimum amount of time, and you'll also only add the minimal amount of sugar. I simmered the jam 500 g at a time in an enameled pan. This cuts down on the overall cooking time, and I had jam in two colors, which made me happy.Change the water 3 to 4 times for hard green plums, and 2 to 3 times for ripe plums, and they will become tender. Don't bring the water to a boil to prevent the plum skins from ripping. Add 70 to 80% of the weight of the plums in sugar. I think it's best to add more than 350g of sugar for every 500g of green plums. This jam becomes quite stiff when cold.
