Mix egg whites and sugar in a stand mixer till fluffy

Add the rest of the ingredients in a bowl and fold in the egg whites

Bake in prepared tins bake at 180 for 60mins or till golden brown and springs to the touch

For the ganache take cream ½cup chocolate 100gmsand put in a double broiler melt till smooth add passion essence 2 dropsand cool completely, add coconut oil 3tsp and melt again for a smooth glossy finish
