My husband loves this dish so much that every time we go to Buca di Beppo he would order it. So I decided that I'm going to cook it for him some day and that day is today :-)

Cooking Instructions

Cook the pasta as directed on package. Reserve about 1 cup of the cooking water and drain off the rest

Place the tomato, garlic and onion in a food processor and blitz into a slurry (this will be your tomato sauce)

Preheat a large skillet and add 3 Tbsp of olive oil. Add shrimp and saute until they turn opaque and dish them out and set aside. Add mussels and sauté for 2 minutes. When mussels open (if not already open) dish them out and set aside.

Add the tomato paste and saute for about 1 minute. Pour in the tomato sauce. Bring to a boil and then add the minced clam with its juice, sugar and pinch of salt. The sauce should be savory, garlicky with some hint of sweetness but not too sweet.

Add lobster meat and give it a light stir. Toss in the scallops (or squid) and shrimp. The clam sauce should be somewhat a bit loose but not runny.

Add the cooked pasta and about 1/2 cup of the reserved pasta water to help loosen the pasta a bit and toss to mix everything. You may add more of the reserved pasta water if needed. Place mussels around the outside of the pasta.

Garnish with lemon wedges and serve.

I'd been promising my daughter that I would make Clam Linguine. But in a mad rush for a late dinner I realized that didn't have clams, and I didn't have enough linguine... In fact, I didn't have hardly any of the right ingredients...So? I improvised...This came out so good that it had my kids arguing. Even my picky little one cleaned his plate and went for seconds.
