Wash arbi under running water.

Put them in a pressure cooker and add a glass of water. Cover the lid and let it cook till you get one whistle.

Once boiled and pressure is released, peel the arbi and cut them in slanting slices.
Now in a big bowl take besan, carom seeds, salt and red chilli powder. Mix them well.

Add arbi pieces so that they can nicely get coated in besan mix.
Heat oil in a large pan and shallow fry the besan coated arbi pieces. - 5
It will take about 5-7 minutes for the arbi to cook and get a light brown colour. At that point, remove the arbi from the oil.

Now we will saute the arbi with spices. Heat oil in a separate sauce wok. Add coriander seeds, hing, whole cumin seeds and grated ginger. Stir well.

When they start to splutter, add the spices and salt.
Add the fried arbi and mix it well so that they get evenly coated with the spices.

The arbi is now ready for you to enjoy! Garnish with cilantro and serve hot.
