In a skillet or pot, fry the bacon strips. Set aside on a paper towel to drain.

SAUCE: Blend together all the raw ingredients: tomatillos, tomato, garlic, onion, cilantro, jalapeños, 1 cup water, and a little salt. Adjust salt at the end, since the bacon will add saltiness.

In the same pot or skillet where you fried the bacon, add the chopped bacon and cook for about 4 minutes. Set aside on a paper towel. Add the beef and sear it (do not fully cook). Add the chicken bouillon and ground pepper, mixing well with the meat.

Sauté the spring onions.

Add the blended sauce and about 8 1/2 cups water (2 liters, or adjust to your preference) to the meat. Add the chopped bacon.

Bring to a boil and cook for 25-30 minutes.

Check and adjust salt as needed.

Add a ladle of cooked beans with broth to a bowl.

Add two ladles of meat with sauce or broth, as desired.
