I hate the taste of boiled Irish potatoes. So I cheat by boiling, then frying quickly in shallow oil. The result is soft inside and crunchy and tasty outside.

I hate the taste of boiled Irish potatoes. So I cheat by boiling, then frying quickly in shallow oil. The result is soft inside and crunchy and tasty outside.
Steps

Put washed and quartered potatoes in a pot of water. Salt and bring to boil.

When potatoes are almost cooked, take off heat and drain.

Cover pot and shake the pot from side to side to gently bruise the potatoes. This adds some crispiness when frying.

Season with a dash of pepper.

Fry in hot oil.
- 6
Serve with sauce of choice, mine was a simple fish stew.
