Ingredients

  1. 2 tbspOlive Oil
  2. 4 cupsChicken Stock
  3. 1Onion, finely chopped
  4. 2Red Chillies, deseeded & finely chopped
  5. 3 clovesGarlic, finely chopped
  6. 350 gChicken Breast, finely chopped
  7. 1Red Pepper, finely chopped
  8. 1Yellow Pepper, finely chopped
  9. 100 gButter
  10. 2 cupsRisotto Rice
  11. BunchCoriander, finely chopped
  12. Salt & Pepper
  13. 25 gParmesan

Steps

  1. 1

    Heat oil in large saucepan

  2. 2

    Add onion and cook until soft (about 5 minutes)

  3. 3

    Add garlic, chillies & chicken and cook for 5 - 7 minutes

  4. 4

    Add peppers & rice and cook until rice is translucent

  5. 5

    Add 50g of the butter

  6. 6

    Add half of the stock and stir

  7. 7

    Keep adding stock as the rice absorbs it

  8. 8

    Once the rice is cooked, turn off the heat and let rest for 5 minutes

  9. 9

    Season with salt and pepper

  10. 10

    Add remaining butter, parmesan & coriander and stir gently
