Ingredients

  • 100 gramsblack beans
  • 100 gramskidney beans
  • 150 gramsmixed quinoa
  • 1small ripe mango peeled and cubed
  • 1large avocado peeled and diced
  • 8-10seedless grapes halved
  • 1Zest of lemon
  • 1Juice of large lemon
  • 1 tablespoonhoney
  • 50 gramsfresh mint leaves shredded/finely chopped
  • 1 tablespoonrock salt to taste
  • 1 cupwater

    Soak the beans overnight and pressure cook/boil until soft, the next day

  2. 2

    Cook the quinoa using a cup of water until soft

  3. 3

    Assemble the beans and quinoa in a salad bowl

  4. 4

    Add the fruits

  5. 5

    In a separate bowl, combine honey,mint, lemon juice and the zest

  6. 6

    Add the prepared dressing over the salad and toss well

  7. 7

    Chill for an hour before digging in. Enjoy!

  8. 8

    My tip: this dressing and the combination of beans work well with any fruits of your choice. Add watermelon, peaches or cherry tomatoes if desired
