Brinjal rolls in marinara sauce

Marinara sauce: blanch tomatoes. peel off skin and remove seeds. chop.

Heat 1tbsp oil in a pan. add chopped garlic fry till brown. then add chopped tomatoes, sprinkle some salt, sugar and pepper. mix well. cook for 5 mins on low flame. cool and blend to a thin paste.

Wash and slice the brinjals. sprinkle salt and pepper on them. brush oil in a pan and cook the brinjals on low flame. flip and cook both sides till golden. cover the lid if required.

Filling: mix hung curd, mozarella, cheese, coriander chopped, salt and pepper in a bowl. apply this filling on the brinjal slices and roll.

Take a microwave proof bowl. put some sauce on it. then place the brinjal rolls on it. pour some more sauce over it. microwave for 5 mins. garnish with basil leaves and serve hot.
