Ingredients

  • 1 cupsemolina
  • 1 cupyogurt
  • 1grated carrot
  • 1/2 cupgreen peas
  • 1/2 cupcorn kernels
  • 1/2capsicum chopped
  • 1 tablespoonchopped coriander
  • 2 slicebread soaked and crumbled
  • 1 tablespoonoil
  • 1 teaspoonchilli flakes
  • 1 teaspoonoregano
  • 1/2 cupgrated cheese
  • 1/2 teaspooneno
  • 1 teaspoonbaking soda
  • to tasteSalt
  • 1 cupwarm water

Steps

  1. 1

    In a pan dry roast semolina to light golden colour. In a mixing bowl add yogurt and a cup of water and whisk it. Add semolina and all ingredients apart from eno and prepare smooth batter.

    The batter should look runny and let it rest for 10 minutes. The semolina will soak the moisture and become soft.

    Preheat oven to at 180 °C.
    Add Eno and stir the batter. The batter for savory semolina muffin should be of pouring consistency.

    In a muffin tray line it with muffin cases and fill each to 2/3.
    Finally, sprinkle some grated cheese on top.

    Bakes muffins in a preheated oven at 180 °C for 20 to 25 minutes or check with tooth pick as different oven takes different time.

    Once baked take the muffins out from the oven and let them cool completely before serving.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes. I have also made a lot of friends.
