Mix Sooji, rice flour and curd properly. No lumps should be there. Add water to make batter of pouring consistency. Keep it aside for half an hour.

Meanwhile prepare masala.

Take a wok. Add oil. Heat. Add rai. Let it splutter. Add urad dal, chana dal. Green chillies, curry pata and asafoetida. Stir. Add Whole Red Chillies. Fry till dal turns golden on low flame.

Now add onions and fry till golden in colour. Add salt, turmeric powder and sambar powder. Add boiled, peeled and Mashed potatoes. Mix properly. Cook for 5 min. Switch off flame. Add coriander leaves. Keep it aside.

Now add salt in dosa batter. Mix properly. Make dosas.

Heat a non stick dosa tava. Pour 1 laddle full of batter on tava and spread it quickly in round shape. Sprinkle some oil. Cook nicely from both sides. Put potato masala and fold it.
