6 servings

2bell peppers, cut into strips
2carrots, cut into cubes
2potatoes, cut into cubes
curry powder
coconut milk
6 pcstofu

Steps

Deep fry tofu for 5 mins on each side, set aside

Stir fry bell peppers, carrots and potatoes until soft

Add coconut milk, simmer for 2 mins

Add curry powder, simmer for 2 mins

Place fried tofu on serving dish, pour vegetables and curry mix on top of tofu, serve
