Ingredients

6 servings
  1. 2bell peppers, cut into strips
  2. 2carrots, cut into cubes
  3. 2potatoes, cut into cubes
  4. curry powder
  5. coconut milk
  6. 6 pcstofu

Steps

  1. 1

    Deep fry tofu for 5 mins on each side, set aside

  2. 2

    Stir fry bell peppers, carrots and potatoes until soft

  3. 3

    Add coconut milk, simmer for 2 mins

  4. 4

    Add curry powder, simmer for 2 mins

  5. 5

    Place fried tofu on serving dish, pour vegetables and curry mix on top of tofu, serve
