Ingredients

4 servings
  1. 1med onion, chopped
  2. 2 clovesgarlic, chopped
  3. 8 ozItalian sausage, loose or sliced
  4. 2 cfresh spinach, chopped
  5. 1red bell pepper, seeded and chopped
  6. 1 tspsea salt
  7. 1/8 tspblack pepper
  8. 10eggs
  9. 2 tsphot pepper sauce

Steps

  1. 1

    Preheat oven to 375°F.

  2. 2

    In a large skillet, cook onion, garlic and sausage until onion is translucent and sausage is no longer pink.

  3. 3

    Stir in spinach, bell pepper, salt and pepper. Cook covered, stirring occasionally, until spinach is wilted.

  4. 4

    In a 2 quart casserole, whisk eggs and hot sauce together. Add in sausage mixture.

  5. 5

    Bake in oven 15-20 minutes or until firm and ligtly browned. Allow to cool slightly before serving.
