Spinach Pizza w/ Shrooms

I got started with making my own pizzas when someone encouraged me to buy a pizza peel and a baking stone and said … go for it. The local supermarket (Publix) bakery department makes the dough fresh and keeps it packaged in a small refrigerator. Very convenient and easy indeed.

Steps

Allow pizza dough to rise and come to room temp.

In a small pot, cook spinach according to package directions. Drain, then press to get the remaining liquid out, and place in a small bowl with a few splashes of balsamic vinegar.

Add olive oil to a medium size fry pan that's beginning to warm. Add the mushrooms and cook until lightly brown, stirring and adding oil as needed. Add garlic near the end. Place on a small plate.

Preheat oven to 425.

Lightly dust dough ball, rolling pin, and rolling surface with flour. Push your palm hard into the dough, turn it over and repeat. Do this a few times. Roll out the dough to the circular size you want.

Transfer to a flour dusted pizza peel if going into oven with a pizza stone. Or, transfer to a baking tray. Thicken the edges of the pie with your fingers.

Ladle out the sauce (or pour, then use the back of a spoon) starting in the center and working towards the edge. Top with cheese, spinach, and mushrooms.

Place pizza into the heated oven and bake for 12-14 minutes. Check on it a few times near the end. Remove, allow it to cool a bit, and enjoy!
