Chirer Pulao (Bengali style poha or flattened rice)

Poha is a healthy breakfast recipe of India but vary in taste in different states of India.This is an authentic bengali recipe which is prepared with the addition of variety of vegetables , nuts and raisins.It can also be packed as tiffin or lunch or simply as tea time snack with a cup of fuming hot tea.

Wash poha. Discard water if any.Smear little salt and sugar and set aside.

Heat oil and fry the vegetables separately in low flame till soft.Sprinkle jeera and when they splutter,add chopped ginger and 2 crushed cardamoms..Fry lightly then add chopped onion.

Fry and add green peas and other fried vegetables.Toss and add the poha.Now add salt and sugar to taste.Also add chopped coconut,raisins and fried nuts.Add few bay leaves and broken green chillies.Sprinkle garam masala powder and garnish with chopped coriander leaves.
