My neighbour has a damson tree and she kindly brought a bag of ripe damsons over to us. So I made an easy damson sauce. I love damsons because they are so flavourful and the taste reminds me of the sour plums I had growing up in Singapore. The sauce is delicious spooned over yoghurt or stirred into hot porridge and will probably be amazing with duck.

Ingredients

  • 1 kgdamsons
  • 400 gwater
  • 250 ggranulated sugar

Steps

    Wash the damsons, then add 400g water into a pan and put the damsons and 1 cinnamon stick in. Cook until damsons are soft and almost liquefied. Stir in sugar till dissolved. Take off heat and strain the mixture over a fine mesh sieve into sterilised jars and seal.
