Ingredients

  1. 5.3 oztextured soy protein (150 grams)
  2. 1/2 stalkcelery
  3. 2bay leaves
  4. 1 clovegarlic
  5. 1lemon
  6. Salt, to taste
  7. 1 dropMaggi seasoning sauce (optional)
  8. 1bouillon cube (chicken or beef, dissolved in a little water, optional)
  9. 1/4 cupchopped onion (about 40 grams)
  10. 1serrano pepper (optional)
  11. Spices or seasonings: black pepper, cumin, oregano
  12. For serving: avocado, cabbage, salsas, peppers, radishes, etc

Cooking Instructions

    Bring water to a boil with the garlic, celery, and bay leaves. Once boiling, carefully add the textured soy protein (it will foam), then add salt and lemon juice. Turn off the heat and set aside. Drain the soy and rinse lightly, removing the celery and garlic. Squeeze out as much liquid as possible.

    In a hot skillet, sauté the onion and serrano pepper (use a little olive oil). Add the soy and stir occasionally, seasoning with the spices and Maggi sauce. Gradually add spoonfuls of bouillon and stir so everything is well coated.
