Start with Preparing Tofu. Drain the water from tofu block as much as possible. Line and top tofu with paper towels or a dry cloth to absorb the moisture completely. Keep a heavy object over it. Let it sit at least half an hour. Once the water is completely drained, cube the tofu.

Use 3-4 spoons of oil on a pan, heat it. Stir-fry the tofu pieces. This way we can avoid deep frying which inturn helps weightloss. Toss and turn to make all the sides of the tofu crispy. Set aside all the stir-fried tofu cubes on a dry paper towel.

On the same pan. Add two spoons of oil and a table spoon butter. Add a Bay leaf, a cinnamon stick of 1 inch, cloves, 1/2 Star anise and fry. Add the diced onion and saute for 5 minutes. You can add a little salt to get onions done quick. Spoon in ginger garlic paste and saute until the raw smell goes off.

Add diced tomatoes and saute until mushy. Add in all the spice powders like turmeric, coriander powder, chilli powder,cumin powder and salt. Using water into it helps to get rid of the raw smell of the spice powders real quick. Close and cook for 5 mins. Once it's done, transfer it to a blender and grind into a fine paste.

Now heat a pan and transfer the fine paste into the pan. Add sufficient water, say 1 cup and let it boil. Add now garam masala, and a pinch black salt. Once the raw masala smell vanishes (5 mins) check for the salt and add little 1 tsp sugar(u can substitute a spoon of jaggery powder). Throw in the tofu pieces and boil for 2 mins. Crushed kasuri methi goes next.

Simmer it to add fresh cream. Garnish with minced coriander and serve it with whole wheat rotis.
