Wash and soak the split moong dal in water for 4 to 5 hrs

Grind the dal in a mixer with minimal water

Add salt, chopped spinach, turmeric powder, chilli ginger paste and chopped garlic.Add soda bicarbonate. Mix well. Chop onions in small cubes.

In a frying pan take 1 tab spoon oil and heat. Add mustard seeds and seasame. Add the chopped onions. Pour the batter over it. Cover and cook for 15 minutes in slow flame.

Lift it carefully and turn it. Or take another non stick pan and remove the Handwa in it with the top surface going down. Pour 1 tab spoon oil in the sides of the Handwa. Cook covered for another 15 minutes. Check by passing a toothpick in the centre. If it comes out clean, it's cooked. Serve by cutting into pieces with chutneys of your choice.

Note : be careful when turning the Handwa. It may break.
