Separate your egg yolks and the whites....preheat oven to 180 degrees C

Whisk your egg whites till they form stiff peaks....

Add in your yolks one at a time as you beat your mixture...add essence

Add in your sugar,a tablespoon at a time to avoid deflating your mixture...continue beating

Sift your flour and cocoa powder.... Use a spatula to gently fold in the flour and cocoa to the egg mixture...do not deflate your mixture

Once everything is well combined, pour your batter into a greased cake tin..

Bake at 180 degrees C for 35-45 minutes (understand how your oven operates)

Decorate as you fancy
