Raw Banana Cutlets (Vrat ka Khana)

#dusshera
Living in South India, raw banana is something that is ubiquitous. We are used to eating off banana leaves which are used for every auspicious occasion. Raw banana curry is a regular in my menu. Boiled and tempered Raw banana curry is tasty when eaten with steamed rice in the south while I have head of Kele ke kofte up north. Banana chips are in great demand and a sought after snack from down South and so is Banana Bhujia.
But honestly I have never made Raw Banana cutlets before and I attempted them with trepidation. But I guess experience with cooking worked for me and they turned out absolutely marvellous. I was adventurous enough to try out different shapes with m cookie cutter. I thought I would have to add Kuttu ka atta as a binder but I didn’t need too. Shall I tell you my secret for that? Well, I cut the bananas into many pieces and didn’t over boil them. I grated the pieces after boiling and peeling and the texture was nice and firm. It was not mushy or sticky and I could easily get them into a fancy heart, star and flower shaped.

Steps
- 1
1. Cut the bananas into 2 inch size pieces. Boil the bananas in just enough water to cover the bananas.
2. Add ginger and 1 black cardamom to the boiling bananas. Once the bananas are cooked but at bite like consistency, remove from heat. It will take 10 to 15 minutes in an open pan. - 2
3. Once cool peel the banana chunks and grate.
4. Add the rest of the ingredients and mix nicely to get a firm dough like consistency.
5. Shape into any shape of your choice, round, cylindrical or take cookie cutters and make fancy shapes like hearts, stars or flowers. - 3
6. Because of grating my mixture was perfect, not mushy or soggy and could be moulded easily. But if your mixture acts up on you then add kuttu ka atta to bind and dust the cutlets.
7. Heat oil in a pan and deep fry the cutlets till golden and drain on a paper towel. You can even pan fry the cutlets. - 4
8. Serve the Raw Banana cutlets with mint chutney. Enjoy
