Scramble the eggs until mixed well. Theres lots of ratios in mixing water with eggs. For me i like it creamier so its ~ 1 part eggs to 1.8 part of boiled cold water. (1:1.8) or (1:1.5) which is up to u. then filter it mainly removing bubbles to make it smoothier.

Make sure no bubbles in eggs then heat up the pan with water when water is boiling hot place the dish (shallow plate) in the pan cover lid and switch to MID heat. 1 min switch off heat and leave it there for another 8 mins. DO NOT LIFT LID during the process.

After its time use should be done but if you want to test it you can poke with knife in the middle. If nothing is leaking out its all good.

Add soya sauce on the side then topped with spring onions. At the end this is optional heat up 1 tsp of oil in pan until very hot, with caution, pour on top of spring onions which should sizzle. Serve hot. DONE!
