Cut the apple, sprinkle it with 1 tablespoon of semolina flour, and sauté it in a pan with 1 tablespoon of vegan butter. When it starts to brown, deglaze with a splash of IPA beer. Once the beer has evaporated, add 1 tablespoon of coconut sugar and 1 teaspoon of vanilla extract. Cook until the desired level of browning is achieved.

Butter the baking dish with 1 tablespoon of vegan butter and sprinkle with semolina flour; start by laying out the first layer of puff pastry. Spread the apples and add 1 tablespoon of coconut sugar, 1 tablespoon of semolina flour, and 1 tablespoon of low-fat yogurt.

Lay out the second layer of puff pastry and 1 tablespoon of strawberry jam. Add 1 tablespoon of coconut sugar and 1 tablespoon of semolina flour. Lay out the third layer and brush with 1 tablespoon of vegan butter, 1 tablespoon of coconut sugar, and 1 tablespoon of semolina flour.

Bake for 20 minutes in a preheated convection oven at 392°F (200°C). Check occasionally.
