Ingredients

  1. 2 lbchicken breast
  2. 5-6md/lg jalapeños (diced)
  3. 1/2lg White onion (diced)
  4. 1Red bell pepper (diced)
  5. 2 clovesgarlic (minced)
  6. 2 cupschicken broth
  7. 1 canWhite Northern beans (drained and rinsed)
  8. 1 tbsfresh cracked pepper
  9. 1 tbsMexican oregano
  10. 1 tbscumin
  11. 3 tspchipotle chili powder
  12. 2 tspSea salt
  13. 8 OzCream cheese (softened)
  14. 4 Ozsour cream
  15. 1/4 cupcilantro (chopped)
  16. 1/4 cupGreen onions (chopped)

Steps

  1. 1

    Place diced jalapeños, onions, garlic, bell pepper, chicken broth, beans, and seasonings to crockpot. Stir to combine.

    Please chicken breasts on top of mixture in crockpot. Set crockpot on low for 7-8 hours.

  3. 3

    1/2 way through turn chicken and continue cooking.

  4. 4

    Remove chicken and shred. Return shredded chicken to crockpot and add cream cheese. Stir well making sure cream cheese is melted. Cook for an additional 30 minutes.

  5. 5

    Turn off heat and add cilantro and green onions right before serving.

  6. 6

    Garnish with cheese of your choice, tortilla chips or avocado.
