Ingredients

2 people
  1. 2 cupscold rice
  2. 1 cupsquid cut into 2 cm finger size
  3. 1 handfulfinely chopped coriander
  4. 1 stalkspring onions chopped
  5. 2eggs whisked
  6. 10fresh chili finely chopped (you can skip)
  7. 4finely chopped garlic
  8. 6finely chopped shallots
  9. 1/4whole onion finely chopped
  10. 3 tbspsweet soy sauce (I love sweet, you can decrease the amount)
  11. 1/2 tspground white pepper
  12. 1 tspchicken powder
  13. to tasteSalt
  14. 1 tbsvegetable oil

Steps

  1. 1

    Heat the pan and add 1 teaspoon of oil, fried the eggs and scrambled the eggs until cooked. Set aside

  2. 2

    Put the pan back on the stove add 1 tablespoon of oil, add garlic, shallots and onions, sauté for about 1 minute then add chili, squid, rice, scrambled egg, sweet soy sauce, chicken powder, white pepper and salt. Mix until well combined and let the seasonings seeps in to the rice, keep stirring for about 3 minutes. Add spring onions and coriander mix and stir until well combined. Take it from the pan and serve on the plates.
