1. Soak chickpeas in large amount of water overnight.
2. Next evening, drain and rinse chickpeas and place everything in food processor.
3. Blend until it resembles breadcrumbs, then tip in to large bowl and refrigerate for at least 1 hour. - 2
4. When ready to cook, take bowl out of fridge.
5. Use a wide bottom pan and fill with around 1cm oil and place over a medium heat.
6. Take a golf ball sized amount of falafel mix, and form in to a patty, almost like a burger. This allows you to use less oil.
7. Fry in oil until golden brown and then turn over. Once cooked, place on a plate lined with kitchen towel.
8. If the falafel are fragile and don't stay together well, add 1 tbsp flour at a time until the mixture binds. - 3
9. Serve with some hummus, and salad.
